Why paxlava, not baklava

In Azerbaijan, paxlava is the tray every family bakes for Novruz. It is cut into diamonds, layered with ground walnut and brushed with saffron before the oven.

Sheki paxlava is different again: a lace of rice-flour threads called rishta, filled with hazelnut and soaked in syrup.
